It is not self righting, but it is very stable and does not flip easily, even in choppy water.
Yes, the boat ESC has an EC3 connector and LiPo batteries are available with these connectors. Make sure to move the jumper on the ESC from NiMH to LiPo: instructions and a diagram can be found in the boats manual.
